These Beet & Goat Cheese Turkey Sandwiches are a delightful combination of savory turkey, creamy goat cheese, earthy roasted beets, and fresh baby spinach, all brought together with a drizzle of tangy balsamic glaze.
Ingredients:
- 8 slices whole grain bread
- 1 lb sliced turkey breast
- 4 oz goat cheese, softened
- 1 cup roasted beets, sliced thinly
- 1 cup baby spinach leaves
- 1/4 cup balsamic glaze
- 2 tbsp olive oil
Instructions:
Four pieces of bread should have goat cheese spread on them
On top of the goat cheese, put slices of turkey, roasted beets, and baby spinach
Add the balsamic glaze on top of the fillings
Add the last few slices of bread on top
Use olive oil to cover the outside of the sandwiches
Toast the bread and melt the cheese on each side of the sandwich for about 3 to 4 minutes on a panini press or in a skillet over medium-low heat
On a diagonal, cut the sandwiches and serve them warm
